Not sure what the keyboard shortcut is, but you can right-click any link and choose Remove Hyperlink.

I take it that the technique isn't for word 2007. because I just tried it with word 2007 and it didn't work.
But what I do is copy and past it onto a note pad, and THEN copy and paste it into word. Then the WHOLE document is clean of hyperlink!
